It depends on whether or not they're really looking for people. Sometimes companies might not have an immediate need to hire people, but keep on going to career fairs just in case there are really good people available. I don't want to bring down your hopes, usually we tend to be more polite at career fairs, i.e., more praises. Then when we get back, we'll look through all the resumes and depending on how urgent we need the person, we'll make a decision to contact the person.
