1 day excursion I would recommend Capri. The other day you will have 2 options. 1) take the bus to Amalfi, walk around a little, then bus to Bomerano, and hike the Path of Gods to Positano. After walk around Positano, bus back to sorrento. 2) if hiking is not your thing, instead of going to Bomerano, bus to Ravello after visiting Amalie, and visit the 2 villas for the fantastic view.

Or option3, boat tour to Amalfi and Positano, a more relaxed way to travel
